This is one the best desserts I have ever tasted. It was always a treat when this was on the table. It was reserved for special occasions, probably because it takes two days to make.

Requested recipes

Hit the comment button below and request a recipe from Betty's recipe archives. If you can't remember the name, describe it as best you can. Half of the fun will be trying to match up your description with the recipe. Try to be specific, though: 'delicious dessert' is not as helpful in the retrieval process as 'half-moon shaped cake/cream thingy'.

Lefsa Recipe

It would be impossible to start any compilation of Betty's recipes without this one leading the pack. Many cultures have created numerous ways to present the potato. Until you've tasted lefsa (when it's done properly) you haven't lived. This recipe evokes memories of winter nights and Christmastimes past. Everyone ended up covered with flour from the elbows to the fingertips. The toughest part was minding our manners as the treats came off the griddle. When they're still hot, hit them with butter, sugar 'em, roll 'em and eat. They're good cold too on the next day, but I always enjoyed them best in a busy kitchen. Lefsa holds up well to microwave reheating. I recommend against using dry heat (oven/toaster-oven) for left-overs.
